1- Healthy cod fish filets

 

Preparation : 5 min
Cooking : 15 min

Ingredients (for 4 people):

  • 4 (or 8) cod filets
  • 8 firm tomatoes
  • 2 tbsp of capers
  • 1 lemon (juice) + a few rounds for decoration
  • salt, pepper and paprika (in powder)
  • 1 tbsp of grated parmesan cheese

Directions:

Choose an ovensafe platter, large enough to place the cod filets on without overlapping.

Cut the tomatoes in fine slices and place them in the center of the dish.

Place the fish filets on top of the tomatoes.

Sprinkle with capers, salt and pepper according to your taste.

Add a little bit of paprika.

Sprinkle on the lemon juice, cook for 15 min at 400°F(200°C).

After 7 min, turn over the cod filets and add lemon juice if necessary (or some white wine).

Place the fish filets and the tomatoes on the serving plates, decorate with lemon discs and sprinkle with Parmesan.

 

 

 

2- Bouillabaisse fish stew made-easy

 

Preparation : 15 min
Cooking : 10 min

Ingredients (for 4 people):

  • 6 potatoes
  • 1 leek or some onions
  • one can of tomatoes pulp
  • garlic, saffron, salt, pepper, olive oil, white wine
  • 4 white fish fillets
  • 1 lb of mussels
  • some large prawns (if you like)

Directions:

Put some olive oil in the bottom of a pressure cooker, a layer of potatoes cut into flat thins strips, a layer of leeks or onions cut into rounds, then tomatoes and relayer with the rest of ingredients.


Cover with 3 quarts of white wine, some crushed garlic, and put in the amount of saffron you desire.


Place the fish fillets on top, the mussels without the shells, the prawns, and some salt and pepper.
Close the pressure cooker.


When it begins to steam, lower the burner and let it cook for 10-15 min.

Open and it's ready!!
